What's For Dinner Tonight: Episode 2021 – A New Hope

I had to go to the grocery store after work, so store-bought roast chicken and a humongous salad from my Aerogarden’s greens.

A Caesar salad with real anchovies, and perfect, tender scallops in a wine sauce over spicy spaetzle, with ice water. Later, some Easter chocolates and a glass of cold milk.

Leftovers!!!

Leftover ham steaks with a pineapple/habanero glaze, leftover colcannon, leftover cream of asparagus soup, Grey Goose on the rocks.

Fish tacos (grilled cod) and bread pudding with whisky sauce.

Porterhouse steaks grilled rare with chimichurri sauce and a salad.

Tonight is hot dogs and bratwurst done on the grill along with onion rings and homemade macaroni and cheese!

A restaurant meal for a change! Fish and chips for me, fettucine alfredo with shrimp for my husband.

Some odds and ends: leftover mac and cheese, Ritz crackers, raisins and a glass of ice water, and later, homemade sugar cookies and a glass of cold milk.

Got a slab of tri tip, a lump of picanha (rump cover) some skirt ( entrana) and some brats and will be grilling cow tonight
Malbec is likely.
Maybe some salad.

I made up a salad dressing of tahini, ginger, rice wine etc, and will be having that on a romaine based salad and a chicken breast roasted after a marinade of lemon juice and pepper.

My gf is taking me out for dinner tonight as a thank you for cooking for her family tomorrow (Mother’s Day). We have two four pound hunks of salmon that I’ll be grilling, then slicing. My knives are sharpened. I have two casseroles ready to put in the oven, and I’ll be making salad tomorrow. Found some nice strawberries so strawberry shortcake for dessert, along with some really awesome coffee.

This is a repeat of another Mother’s Day I did pre-COVID-19.

Tuna croquettes, asparagus, sauerkraut, and some really good watermelon. Glass of red wine. I made some strawberry sorbet a few days ago, so that’s on deck for later.

Today was a bunch of yardwork, so neither of us felt like cooking. I picked up Chick-fil-a on my way back from the liquor store, so a spicy chicken sammich and scotch for dessert.

Tomorrow, we’re planning on making beef fajitas.

I’m making a Cinco de Mayo meal a couple days late. I was getting bored with what I usually make for Cinco de Mayo, so today I’m attempting to make chicken molé. I went so far as to procure real Mexican chocolate disks.

Tossed salad, calamari, steak fries and then a slice of vanilla cake with strawberries, along with a glass of ice water.

Chicken tinga burritos, refried beans, whatever fruit I feel like pulling out of the fridge.

Chinese buffet.

Due for another shopping trip tomorrow, but fortunately I froze one of my favourite prepared dinners and it’s on tap for a late dinner tonight: roast chicken breast stuffed with a garlicky spinach-based stuffing with a side of creamy fettucini alfredo and broccoli with Provencal garlic butter. (Did I mention that I like garlic?)

The basil plants are prolific so mote home made pesto.

It is GnT season.

Visited a new Mexican restaurant neaby: duck tortillas, chorizo tacos, a Corona beer and some flan with a sprinkling of diced pineapple. Quite tasty!
