What's For Dinner Tonight: Episode 2021 – A New Hope

Ok, I’ll …um, bite.

I made a batch of Kitchari a couple days ago, I’m trying to eat it for at least one meal a day. I usually go by this version, though I am a lazy cook and substitute liberally. (as in, the spice mix is not ground and curated by me.) I believe in the restorative property of easy to digest food made with care, but I’m not good at a mono-diet approach. I will probably chase my meal with a handful of Fritos. : )

Turkey Scallopini With Marsala Sauce served with a side of stewed carrots, apples, and fennel. A wine medley to drink (we had three opened boxes and finished them all).

Boneless pan-fried pork chop with cherry/mustard sauce, roasted potatoes with a little Gruyere sprinkled on top, spinach souffle and fresh blueberries.

Breaded grilled chicken with rice and teriyaki sauce and a glass of ice water; later, homemade banana bars and a glass of cold milk.

Tonight will be BBQ chicken legs and smoked sausage, cole slaw, corn on the cob, and Bush’s baked beans.

Pan cooked Lamb steaks, mash potato, steamed veges (carrot, zucchini, peas, silverbeet, broccoli, cauliflower) with some hot English mustard on the side.

Last night we had turkey burgers on the grill with a wonderful tomato plus some homemade fresh cut fries.

I think I will make burritos tonight…

My gf is low-carbing, so I made shrimp stir fry substituting riced cauliflower for the rice. It wasn’t awful.

Cheeseburger with cheddar, two slices of bacon, lettuce and tomato, with tater tots on the side, a Truth IPA and a glass of ice water. Later, a Kit Kat bar and a glass of cold milk.

I’m exhausted from doing lots of grocery shopping at two different stores, so something simple or ready-to-eat tonight. On the plus side, there is lots and lots of stuff to choose from. I think I’ll have one of my faves, a giant chicken burrito, freshly made at one of the local stores and really delicious. For dessert, Haagen Dazs vanilla ice cream with a mix of strawberries, blueberries, and raspberries.

I happened to notice a new line of items in one store – a variety of vaccum-packed precooked sous vide entrees. I know some of you have spoken highly of this cooking technique. I picked up a pack of sous vide piri-piri chicken that I’ll try sometime. Looking forward to it – I like the kick of piri-piri. I’ll probably have it with my house-standard vegetable-broth rice with porcini mushrooms.

Ceviche; tuna and mango in lime juice with onions, jalapeños, habaneros, cilantro, capers, etc.

Served with air fryer crispy snow peas.

Jamesons and ice to drink.

For Memorial Day, I have some baby back ribs in the smoker. And I threw together some coleslaw last night which is currently in the fridge soaking up its dressing. And in a little while I’ll start making some potato salad. And of course a nice cold beer; I’ve got Alaskan Amber and North Coast Blue Star Wheat in the fridge.

Yesterday was chicken salad sandwiches made with the last of a roasted chicken (I almost said “made with the tail end”). Tonight I’m going out for sushi.

Turkey hotdogs and turkey burgers on the grill. Condiments included thick cut bacon (pig) that I made sous vide.

Sous vide bacon: place entire unopened package in unit. 145 degrees for 12 hours (overnight). Pour out fat. Place bacon in refrigerator until needed, then crisp it one minute per side in a hot pan. Perfect!

I made beef fajitas for Memorial Day. after cleaning the grill really well. Too well, I guess! . Some parts had rusted through. We priced the parts, so guess who’s getting a new grill? It’s unbelievable that parts cost more than a new grill…

Last night I made King Ranch Chicken, pulled from the freezer. Tonight? Who knows…

Two bowls of Honey Comb cereal in cold skim milk.

Grilled salmon, riced cauliflower and mushrooms, coleslaw. Michelob Ultra to drink (leftover from the weekend. Bleech).

I did breaded chicken planks in the air fryer and fried potatoes with onions and peppers. We had some leftover homemade strawberry ice cream for dessert.

Mac and cheese, some BBQ potato chips and a glass of ice water.

Escargots, filet mignon, and creamed spinach with feta.

Once again, the Spousal Unit said my escargots are better than the restaurant’s. :slight_smile:
