Saturday I made filets on the grill, along with sautéed mushrooms, steamed asparagus and one giant twice baked russet potato split between us.
Sunday morning I made a steak, asparagus, and mushroom omelette, with sliced tomatoes from my boss’s garden. For lunch we ate leftover baked potato! There was absolutely no waste to that delicious meal.
Last night we got mediocre Chinese. It was ok, and I didn’t have to cook!
I made the best stir fry style rice last night but in the oven.
I roasted mushrooms, carrots, green beans and onion in olive oil. Then I took the leftover white rice from Saturday’s take out and crumbled it on top of the veg. Mixed in Soy, ginger and sesame, put it back in the oven. I meant to cover it so it could steam up but got involved with the baby backs in the instant pot and forgot.
The rice was fricking great, loved the texture had a little crunch going on.
IP ribs were yummy, pressure cooked it first, then switched it to the fry lid and zapped it to give it some char. Crisp skin tender meat.
Easy clean up.
Caesar salad with grilled chicken, Pillsbury Grands biscuits, and a glass of ice water. Later, coconut macaroons drizzled with Hershey’s chocolate syrup, and a glass of cold milk.
For dessert I stewed some rhubarb, added an equal amount of sliced strawberries, then added a sliced banana and simmered awhile. Served over ice cream.
We went supremely lazy and had McDonald’s. She had teeny cheeseburgers, and I kind of panicked at the drive thru and ordered a Quarter Pounder with bacon and cheese. It wasn’t a total mistake, the bacon was pretty good for a McDonald’s affair, but it kind of showed up the rest of the burger. I’ll probably get McNuggets next time.
Next two nights: another pack of the sous vide piri-piri chicken I mentioned before, to use up leftover sides. This stuff has been precooked sous vide and requires only browning in the oven.
Tonight: piri-piri chicken with leftover vegetable-broth and porcini mushroom rice. Tomorrow: rest of the chicken with leftover seasoned wedge roast potatoes and Greek salad. Greek salad seems to be temporarily displacing Caesar salad as my fave.
Grilled breaded chicken, mashed potatoes with BBQ sauce, and a small tossed salad with Caesar dressing, croutons and bacon bits, and a glass of ice water. Later, more raspberries from our backyard garden and vanilla ice cream.
We went old skool and visited a local steakhouse last night that’s been around since 1969. I doubt much has changed in the dining room or on the menu since then. So - steak, baked potato and iceberg lettuce salad. Every table also gets a basket of crackers with pots of spreadable cheese and pate and a side of carrots, celery and pickled onions.
romansperson, I love that. The place you went reminds me of going out to dinner with my grandparents when I was small and easily impressed by the “luxury.” Except our relish tray would have had highly coveted black olives which Grandad would pretend to take.
