What's For Dinner Tonight: Episode 2021 – A New Hope

How you doing?

A guy near us does smoking in his garage. We stopped and bought some smoked cheddar cheese. I used it to make macaroni and cheese using some weird corkscrewy pasta. So good!

Petite salmon filets pan fried and coleslaw as well.

Vodka on ice to drink.

My wife noticed that there is a Laotian food market/restaurant around the corner and suggested we get that tonight. It was an excellent suggestion. We had egg rolls, spicy Lao sausage, fried pork ribs and split an entree of green curry. Fantastic feast, and will do again.

Started off with some cheese and honey. Now I’m having a cuppa chicken noodle soup (with tons of croutons) while waiting for my tube croissants to bake.

Technically, I’m having a 3-course meal tonight. :innocent:

A friend gave me some nice cucumbers and 4 cans of Heady Topper. I sliced cukes and onions, added vinegar, salt, pepper, sugar, then some tomatoes.

Went great with the four cans.

Just for something different, pork and veggie kabobs on the grill, marinated in a chipotle sauce that I haven’t tried before.

Not sure whether to have some with roast potatoes and beans (Bush’s Homestyle with sauteed onion and hickory smoke BBQ sauce) and save the rest for ramen noodles, or just save all of it for ramen. I do loves me some ramen with grilled pork and fresh scallions!

Tonight was queso fundido. We have enough leftover for a couple of snacks tomorrow.

I made a zucchini themed dinner. Lightly breaded and fried zucchini blossoms, zucchini pancakes, and a chocolate-zucchini cake for dessert.

No time to make zucchini wine, but it exists.

Last night was classic summer. Grilled cheese burger and con onna cob. Think I may do the same tonight, perhaps some cole slaw too.

Update on the pork & veggie kabobs and the hitherto untried chipotle marinade.

My “fingertip taste test” was that the marinade was very good but quite a bit sweeter than I would have preferred. As I had hoped, after grilling most of the sugars caramelize and/or burn away, leaving nicely seared and deeply flavourful kabobs. I intentionally timed them on the short side so, if anything, they’d be slightly underdone and perfect and tender for cooking with ramen. I now have a refrigerated plateful of enticing pork loin pieces with grilled peppers and onions. Ramen FTW!!

Didn’t have them last night, though – had stuffed chicken breast with fries and dipping sauce. Tonight having more of those wonderful chicken burritos (hey, I’m a creature of habit!). But definitely starting in on the ramen either late tonight or for lunch tomorrow!

Mr Rebo brought home 3 or 4 pounds of Fredericksburg (TX) peaches Friday night, so I made a fantastic peach crisp. The last of the unused peaches is in my bagged lunch today. Damn, they’re good!

Dinner was seafood gumbo two nights in a row. I’ve found this frozen gumbo base that really gives the taste of a dark brown roux without all the work!

Dunno what’s for supper tonight, but I bought some empanada wrappers so that’s on the menu this week.

Grilled turkey breast cutlets basted with barbecue sauce. Sliced onions and cucumbers in vinegar. Grilled peaches (nearing the season’s end).

Linguini with a sauce of some cherry tomatoes cooked in a skillet in some olive oil and garlic until they just burst, toss in a big handful of chiffonaded basil. Finish with some parm and a side of nice crusty bread.

Grilled pita with cheese and bacon, french fries with ketchup, a dill pickle and a glass of ice water. Later, a mint chocolate milkshake.

It’s noodle festival at Wolfpup’s (a pup who loves noodles)! Late lunch today: ramen noodles with the last of the chipotle pork kabobs, peppers, onion, and chopped raw scallions. Dinner will be fettuccine alfredo with several pats of melted garlic butter, and lots of grated Parmesan. Dinner tomorrow will be spaghettini with semplice marinara sauce and whole mushrooms sauteed in garlic butter.

The patch of chanterelles that we enjoy every year is back again. My gf made a chanterelle curry that we had over couscous (huge couscous, not the tiny couscous). Served with a nice salad.

Kielbasa with onions and potatoes … only this time, I added diced apple (new addition - I like it!) plus a handful of (cooked obvs) bowtie pasta. Plus about half a head of garlic cloves, and a big, fat, green onion for color and subtle crunchiness.

OMG. You ever had a meal so good, you wanted to eat it again?
After having a crap appetite for so long, it’s amazing to just … wanna keep eating!

Last night I took some cooked frozen homemade meatballs out of the freezer, sautéed them with mushrooms and onions, and made a quick brown gravy. Served over mashed potatoes with steamed green cabbage.

Tater skins doctored up with extra cheese (Provolone) plus green onions and sour cream.

A few chunks of cantaloupe as a starting appetizer, since I’m basically having appetizers as my actual dinner.

ETA: plus a multivitamin and some glucosamine tablets.
