King Ranch Chicken, for the first time ever. Very good. Depending on how well the leftovers reheat, would make again.
Last night I made Margarita Wings, marinated in a POTENT lime and orange margarita. I had to test the marinade beforehand - quite tasty! Sides were corn on the cob and a cold orzo/veggie salad. Delicious!
Tonight might be something easier. That was a lot of prep! I wish Mr Rebo liked sardines! That sounds really good.
I grilled a nice salmon filet, six ears of corn, and two peaches. Everything was coming along fine until my propane started to run out. I kept the grill cover down and switched to a new tank, but when I opened the lid to relight the grill, everything looked done! Indeed it was, though the salmon was medium rare.
Don’t you hate that? You got lucky.
Last night I lost power for a while, so I moved he ribs from the oven to the weber kettle, and am glad I did. I was feeling lazy and didn’t want to fire up the grill, so started the oven. Anyway, a few hours on the grill and an ear of corn later the ribs were great.
Heh, my gf told me I should have changed tanks before dinner. I told her I was fine with being lucky.
A BBQ chicken wrap with tater tots and a Truth IPA. Later, some Oreos and a glass of cold milk.
We had my daughter and son-in-law over for dinner last night. We usually meet at an Indian restaurant because they are vegetarians and my daughter is lactose intolerant, but I felt like tackling a meal for them.
I made meatloaf. Specifically it was vegan meatloaf made with French lentils, mushrooms, and ten other veggies. I was surprised at how close it was to “real” meatloaf consistency. I served riced cauliflower pancakes with it. Grilled peaches for dessert.
Last night I grilled ribeye steaks and made baked potatoes and steamed asparagus for my son’s birthday. I knew he was bringing older granddaughter with him, but I got surprised when younger granddaughter came, too!
It was a fun night. We might order in tonight. Maybe KFC.
My vegan meatloaf was such a hit that my daughter and SIL came over last night for another vegetarian meal.
I made Chana Masala (chickpeas in a spicy sauce) and my version of Gobi Manchurian (batter fried cauliflower with a very spicy sauce).
Mango Lassi to drink. There wasn’t enough food left to satisfy a housefly.
Tonight is Bacon Wrapped Jalapeno Popper Stuffed Chicken. Cooked on the smoker.
You made jalapeño poppers, stuffed a chicken with them, then smoked the chicken?

Basically a large jalapeno stuffed with cream cheese, cheddar, and bbq seasoning, stuffed into a large (1b) boneless skinless chicken breast, then wrapped in bacon and smoked at 250 for two hours.
General Tsos chicken and fried rice.
Tonight was leftovers from last night. Green chile chicken tacos with a stripe of green jalapeno sauce, and a stripe of red habenero sauce from HEB. Good last night, good tonight. Still enough for one of us to have lunch tomorrow. at least. I hope I’m the lucky one who gets hungry first.

Last night was grilled chicken legs and smoked sausage, along with my Famous* macaroni salad and corn on the cob. Beans just for my husband because I have to be in the office today.
*My granddaughter texted me to ask for the recipe!
Tuna fish and lettuce sandwich and a bag of Harvest Cheddar Sun Chips. Later, some maple cotton candy I bought at a local community festival, and Swedish vanilla crisps.
