What's For Dinner Tonight: Episode 2021 – A New Hope

Hehehe, I have to agree with you. I’ll eat pasta with red sauce without bread, but without that chewy addition it just seems incomplete.

Corned beef, spuds, carrots and onions.

Washed down with a Guinness for me, a Harp for Mrs P.

Pot roast - been in the slow cooker while I was away at work. Nice to come home to a home that smells warmly of dinner. Boiling up some egg noodles right now to soak up the sauce.

Yum.

In honour of St.Patrick’s day I made an Irish stew with lamb shanks, baby yellow potatoes, onions, garlic, carrots, thyme and rosemary braised in Guinness. 2 hours in the dutch oven and it was utterly lovely! Of course, I had to have a Guinness or two to go with. Didn’t have time to make soda bread, more’s the pity but here’s leftovers for tomorrow so…

Shepherd’s pie. Should have thought to get a Guinness, but didn’t.

The plan was for corned beef and cabbage, but my gf was in Pittsburgh Tuesday getting her vaccine and Wholey’s Fish Market had beautiful Mahi-mahi that she couldn’t resist.

I grilled the Mahi-mahi and served it with air fryer asparagus.

Hehe, for St. Patrick’s I had mesquite grilled chicken, tortillas, rice and beans from El Pollo Regio.

I regret nothing!

Made a quick pasta sauce, saute up some onions and chopped dry chorizo in a generous amount of olive oil. , add chopped green olives , continue to saute whilst all the chorizo oil and flavor gets mixed in, and cook pasta. When pasta is cooked throw a handful of halved cherry tomatoes to the mix, stir quickly then add the pasta to the pan and stir altogether a serve. The larger amount of olive oil is so it absorbs all the chorizo flavors and coats the pasta.
10 minutes tops to make and quite tangy and delicious.

Tonight will be breakfast for dinner - Belgian waffles, bacon and fruit. Tomorrow will be Chile Colorado Stew.

Last night more duck with BiL and family who bought their Dobie puppy, well 75 lb 7 month puppy who turned its nose up at the duck liver and kidneys I kept, shocked I tell ya, our old Mac would hover those up along with the necks.
Anyway rotissery and shredded crispy duck and hosin sauce with spring onions and cucumber in tortillas (best we could do)
Today was an asado with the very pleasent Texas spring weather so tri tip slow grilled over coals then some entrana (aka skirt) seared sliced and served and a satiated family.
Probably need to start paying attention to the doctors recommendations tomorrow.

Steak, ale & mushroom meat pie, with half a baked potato topped with mushroom and piped duchess potato, and a few glasses of Spanish tempranillo. Not the result of anything I personally created, but the result of foraging earlier today at my favourite gourmet food store. I would have been even happier with their incredible short rib meat pie, but they rarely have it. This meat pie is very very good, but the short rib is to die for!

Tomorrow I am refilling the barbecue tank. Grilling season is upon us!

Debating between leftover pot roast vs ordering a pizza. One has the advantage of not having to leave the house, the other is I haven’t had pizza in weeks, and I’ve had pot roast for three days in a row.

Steak salad, Pittsburgh style. Sous vide medium rare NY strip steak sliced and served on a bed of greens with sweet peppers and Blu cheese. Topped with air fryer fries and a creamy balsamic dressing.

Served with assorted IPAs from a Stone Brewery variety pack and Louis M Martin 2017 Cabernet Sauvignon. Raisin mincemeat cookies for dessert.

All these meals are making me hungry!
Tonight was take out, honey garlic wings and mozza sticks for SWMBO, beef dip with smoked gravy and fries for me, oozy with red onions, mushrooms, swiss cheese, and a dash of horseradish mayo. She had a glass of 19 Crimes Uprising and I had an ice cold Smithwick’s from a can. Dessert was raspberry pastry sticks.

Due to a trying day at work yesterday for both of us, last night was an order of al pastor alambres for me and a quesadilla for my sweetie from El Tizoncito. It was beautiful, and I thank them for making the end of yesterday comforting and delicious.

Tonight, even though work wasn’t bad, I suggested we dig into the box of jalapeno cheddar corn dogs we have in the freezer. Mmmmm, I have no complaints.

Tonight was homemade flatbread pizzas. Passatta, coppa di parma, fruilano and parmesano reggiano, for SWMBO. Passatta, fresh thyme, asparagus, enoki mushrooms, two cheeses above and a dash of oregano, black pepper and red pepper flakes for me. Accompanied with a Church and State Lost Inhibitions Red. Chocolate from Morden’s of Winnipeg for dessert.

And you say you hate summer … :wink:

Today was shakshuka, salad and breadsticks. Tomorrow is city ham and roasted vegetables with fresh strawberries. Probably the last two breadsticks too, and leftover spaetzle for my husband.

May as well enjoy the few benefits of this miserable hot season! :slight_smile:

Last night I made birria tacos, which I hadn’t made before. They came out awesome.
