What's For Dinner Tonight: Episode 2021 – A New Hope

Leftovers from the last week. The real story though was dessert. I made rice pudding with jasmine rice, almond milk, dried cherries, and assorted spices.

Parboiled baby potatoes, sliced kielbasa and shrimp oven fried in garlic butter. A riff on a Red Lobster meal I had once. Plenty of garlic powder, pepper and Slap Yo Mama

Yesterday morning our friend/neighbor dropped off a box of assorted vegetables from their farm market. We made veggie soup, eventually adding Turkey meatballs and gnocchi. Delicious!

Cabernet Sauvignon to drink.

Caesar salad, rigatoni in marinara sauce and chicken parmesan, with two ginger ales.

French dip with horseradish sauce, and a hot brownie.

Big ol’ cheeseburgers with BBQ potato chips. Jim Beam and Coke Zero for my drink.

Iceberg wedge with blue cheese and chunky bacon bits, then filet mignon and lobster mac and cheese, washed down with two sidecars and ice water. Later, two cups of decaf and a wee piece of cheesecake with raspberry coulis. Yum.

Leftover veggie soup. We call the box of vegetables our neighbor dropped off “pig veggies”. Normally, vegetables at the market that are “blemished” get fed to their pigs. Last week we helped them load their pigs onto a truck (the pigs were told they were going to pig camp, but we know better). So now, we will occasionally get pig veggies until the next group arrive in the spring.

Green chili stew: pork shoulder, roasted Anaheim peppers, onion, garlic, spices, potatoes.

Last night I made spaghettini aglio e olio again, and it was exceptionally good – different proportions of things subtly alters flavour and texture – I’m learning and getting better! There are leftovers for tonight. Much later tonight, pork and vegetable potsticker dumplings, anointed with hot chili garlic sauce and soy dipping sauce on the side.

Grilled Italian hot sausages with corn and jalapeño waffles.

My gf works from home but had a very busy day. We ate around 10 pm. She asked that I surprise her.

Taco truck tacos and burrito.

AITA for only posting when I make something pretty? And the only one posting pics? I know this isn’t a picture thread but some of y’all’s dinners need some visualization!

Here’s my pretty attempt to feed 4 adults with only 2 chicken thighs and a two containers of mushrooms.

I often try for photogenic, but miss.
Here is Cuban Black Beans & Spanish Rice, YinYang

And this is Italian Sausages with Corn and Jalapeno Waffles.

Corn and Jalapeno waffles sounds sooooo good and looks even better. Also, I’m Puerto Rican so beans and rice is always, ALWAYS nice. More than nice. Mandatory, even.

It does look good.

Buffalo wings with blue cheese, celery and carrots last night, and some tater tots with ketchup, washed down with ice water and a Truth IPA. Later, some mint M&Ms and a glass of cold milk.

Ahhh, the Cincinnati brewery. I like their IPAs, but have been disappointed by a few other beers they’ve brewed. And I’ve never figured out their logo…

Since we’re doing pictures, here’s a grilled sea bass I did a little while ago, which turned out so well I was tempted to take a picture. Definitely my favourite fish on the grill. First pic, taken off the grill and plated. Second pic, with Wolfpup’s rice recipe cooked in vegetable broth with either sauteed onion or dried porcini mushroom (that one looks like the onion version – no mushrooms visible).

After a bunch of grocery shopping today, I’ve amassed so much snack food that I may not have a proper sit-down dinner for a long time!

Sandwiches galore! An assorted sub, a ham and cheese croissant, tuna salad for more sandwiches, nearly a pound of freshly sliced Grandpa ham (Sikorsky makes great stuff, beautifully smoked), a big tub of 7-layer Mexican dip and a bag of tortilla chips, a couple of huge chicken burritos, and some vine tomatoes and lettuce for – of course – adorning sandwiches!

Pizza.
