I am not making the turkey this year and I think I subconsciously made a mini turkey dinner without realizing it. The whole thing was an experiment that turned out yummy. There is a picture but I am trying to refrain from spamming this thread with dinner pictures.

We had panko and cheese encrusted flounder with green beans amandine, homemade focaccia and clementines. Chocolate-pumpkin cake with chocolate coconut topping for dessert.
I need very little prodding.
I call it Bare Assed Spatched Cock over Stuffing. The spine is under the bird amongst the stuffing. The bird was dry brined overnight. The stuffing includes an old box of Stove Top, accidently burned in the microwave loaf ends, leftover from a soft cheese lunch wheat stone crackers and small diced veggies and mushrooms.
Thought the stuffing would get super greasy because the bird is slathered with Bell’s Seasoned butter but it wasn’t and I had to keep adding liquid to it the whole cooking time so it wouldn’t dry out. Nobody asked me any of this but I said it anyway.

Sat on my lonesome in the hotel restaurant ( here for a conference) The chap at the next table stated chatting with me , said he was a journalist and author and is speaking at the same conference tomorrow. He had some interesting opinions ,nice enough person, wasn’t quite sure I would agree with them but I am not one to start a fight . Turns out he is Michal Shellenberger and googled him. Hmmm well yeah .

For me last night: two IPA beers with friends at a local microbrewery as we nibbled on nachos with ground beef, melted mozzarella and red onions, potato chips with onion dip, and french fries with ketchup. Later, at home, an open-faced sandwich with chunky PB and raspberry jam on whole wheat, and a glass of ice water, and later still, some mint M&Ms with a glass of cold milk.

You all are giving me motivation - I’ve been in a real cooking rut and most days after work am happy just to grab something already prepared or frozen, instead of properly cooking a meal.

Flank steak fajitas prepared using the sous vide method. I thought the steak was a little under seasoned for my taste.
