Black cod fillets with ABC kecap manis (sweet soy sauce), and roasted Brussels sprouts with diced bacon and drizzled with balsamic glaze. Imperial oatmeal stout to drink.
All day chill. A big pot of chili started in a LeCrueset Dutch oven on the stove, then moved to the oven. Stew beef minced fine sausage, ground turkey. Served with cornbread and goat cheese. Amazing.
To drink ? BEAUJOLAIS NOUVEA 2022!!! A traditional November thing. We determined this is the 18th time we’ve done this.
I’m going grocery shopping tomorrow: I’ll have to see if there’s any nouveau on the shelves.
Today was stuffed shells, naan, and satsumas. A little glass of port and some Moravian chocolate peppermint cookies for dessert.
I made something new, spam tacos. Laid a street taco shell down lightly coated in boom boom sauce left over from Fridays supper. Put a slice of Spam and a mozzarella cheese stick on the shell and covered it with another shell. Baked in the roaster for 15 minutes. A nice and easy warm treat on this cold night.
Back home, last night was frozen chili and rice then I had a 14 hr sleep so most of today I was in a haze and didn’t eat. For dinner we fried some chopped onion and chorizo and olives in some olive oil , threw in some halved cherry tomatoes and penne ( cooked ) right at the end with a bit more olive oil and stored it around . Served with sprinkle of the dried ground homegrown cayenne pepper for me and Parmesan for both or us. Malbec to accompany. Very hungry so ate way too much.
Last night was grilled chicken legs and venison sausage, along with cole slaw and corn on the cob. I have no idea what tonight will bring.
Tuna fish on oat bread (a bit dry), some couscous, and a bowl of roasted red-pepper soup, with a glass of water. Later, a large hot mocha with extra chocolate.
After some exercise it will be Jacket Potato, sour cream, bacon bits, olives , cheese . and fresh jalapeño .

Last night was HEB Vegetable Lasagna in-a-box, tonight was leftover HEB Vegetable Lasagna in-a-box (hey, we’re gonna be cooking Thanksgiving for pretty much three days, and it’s very tasty lasagna). Garlic bread on the side. HEB Mexican hot chocolate ice cream for dessert.
General Tso’s chicken tonight with rice, of course, and a coupla egg rolls.
Earlier, I had a French dip from a local sub shop. Now I’m heating up a butternut squash ravioli frozen dinner.
It may not sound like much, but I’ve had zero appetite lately and this is quite a bit of food for me for one day.
It’s nice to be hungry again … just in time for the holidays!
Wow. Add tapioca pudding cup, some cheese and honey, and ice cream with chocolate sauce afterwards.
For someone who literally goes days without eating anything solid, this is a good thing.
Leftover chili, goat cheese, cornbread. Vodka and lemon juice over ice to drink.
The cornbread brought up the topic of Jiffy Cornbread, the best cornbread ever. Right? We don’t eat much cornbread, but both agree that Jiffy is the way to go.
I make mine from scratch. It’s not that I’m THAT kind of person, I just think it’s quite easy to make since I’ve been making it since I was a kid. You have to add egg and milk to Jiffy, right? Cornbread for an 9x9, or cast iron skillet:
1 cup cornmeal
1 cup flour
4 tsp baking powder
1 tsp salt
1/4 cup of sugar (optional, but I like mine sweet - sue me)
1 egg
1 cup milk
Preheat the oven to 425° with your baking dish, with a bit of lard or oil. Bring out your pan when the oven is hot, pour in your mixture and bake for about 15 to 20 minutes.
Of course, you have to have the ingredients on hand. Today I will be making cornbread for the Thanksgiving dressing. It has to dry out a bit.
I like to add corn kernels and cheese and green chilis sometimes.
Last night I made sautéed chicken livers, mac and cheese, and asparagus.
OK, your from scratch recipe is basically how my gf would make cornbread from scratch (less sugar), but she claims in a blindfolded taste test the Jiffy would win out.

Mini hot dogs in pastry rolls, a tossed salad with Newman’s Own raspberry vinaigrette dressing, some White Cheddar Cheez-Its and a glass of ice water. Later, some grapes and a pear.
Had a big brunch today, so no big interest in dinner. It will be the laziest dinner ever, but still yummy. Sapporo Ichiban ramen with sliced spicy roast chicken and sliced mushroom, garnished with green onion and drizzled with soy sauce. The great gift that the Orient gave us was the ability to prepare stuff with complex textures and tastes in mere minutes.
Kraft Dinners tonight. I threw some Thai chilies from our garden and some crushed red pepper in mine.

I make mine from scratch too if it’s to be served as a side (I prefer it not to be sweet in that case), but Jiffy always goes on top of tamale pie. The sweetness combines well with the spicy smokiness of the meat and beans.
