What's For Dinner Tonight: Episode 2021 – A New Hope

Takeout from our favorite local pizzeria: a dish of Caesar salad, half a calzone with mozzarella, ricotta and feta cheese, capicola ham and minced garlic, and two slices of pepperoni pizza, with a glass of ice water. Later, half a piece of pumpkin cheesecake with a glass of milk.

Mrs mollusc made a great lentil stew with some bacon bits and potatoes added .

Tonight I am picking up our daughter who is flying back from collage for thanksgiving, I’ll go get some sushi first and leave it in the fridge for when we get back late from the airport.
Tomorrow is turkey with BiL family, he says he has a bottle of High West Campfire whiskey to help the turkey digest.
Friday we are taking daughter to get curry at Kirans ( best curry in Houston in my humble opinion)
Saturday , probably won’t be able to eat.

Our customary Thanksgiving feast: roast turkey, homemade mashed potatoes with gravy, stuffing likewise, baked rolls, lima beans (mushy with plenty of butter, just the way I like ‘em), washed down with ice water and a little white wine. Later, a small slice each of homemade pumpkin and apple pies, with a glass of milk.

Today was Thanksgiving redux, of course: Turkey, au gratin potato cakes, green beans, cranberry sauce, crusty bread and blueberries. Pumpkin roll for dessert. Today I am grateful for most that stuff to be gone!

Well, since there’s just the two of us, we could pare down all the sides to be appropriate enough that we had finished most of them. There’s still some salad and a couple of rolls left. However, adult turkeys come at around a minimum size. Even for us and the cats, there’s still quite a bit of turkey left.

So, tonight was a delicious turkey sandwich with Dijon mustard. I expect I’ll have a couple more, despite the cats and I constantly snacking on it.

Tonight was bucatini with feta cheese and onions sauteed in lemon-infused olive oil, garlic bread and blueberries. More pumpkin roll for dessert, I froze the remainder of it for later.

I made Fried Ramen, which is an old family favorite I have not made or eaten in probably 20 years or more. It was so good, I ate way more than I should have. But it did not stop me from having a donut for dessert.

I mean, I’d already bought it. What else could I do?

Beef Shepherd’s pie, and for my vegetable, leftover pumpkin pie. (It was superb pumpkin pie. I’ve worked on the recipe a long time.)

Tonight will be leftover ricotta & spinach lasagna, with a Caesar salad and some more J Lohr California Cabernet. I’m not normally a fan of vegetarian lasagna, but there’s a local outfit that makes great frozen lasagna, and their ricotta & spinach variety is the best lasagna I’ve ever had that wasn’t homemade!

Like, you cook ramen noodles then re-fry them?

I do something similar with leftover pasta (fry with bacon and onion … mmm!) so if I guessed correctly, I am intrigued.

If not, enlighten me, please!

Yes, after I boil and drain them, I add the seasoning packet and some soy sauce and then I fry them in some butter until they’re getting nice and crispy on one side. Then I flip the noodles and make a hole in the center where I add a couple of eggs and just “okie” scramble them in. I add some mixed vegetables to it and then cook until it’s as crispy as I like it. I add a little more soy sauce as I cook, but this is up to your taste preference. It probably goes without saying that you don’t add any salt.

I made some yesterday for my daughter, but she’s sick and couldn’t taste them. Her husband liked them though and I gave my daughter an IOU to make it for her again when she has taste buds. Hope you’ll like it if you decide to try it.

Last night it was a 22 oz. can of Spaghettios.
I will do better tonight.

Last night was a chips’n’dip munchies-fest, complete with nachos. I needed something lighter and with more protein tonight, so I’m having sardines on Triscuits, garnished with alternating spicy chili crisp, and capers/onions/lemon juice.

Plus a nice, hot cuppa Earl Grey to round it all out.

A slice of angel food cake for dessert sounds like a good finale.

Okay. Twas a nice salad, spaghetti, with water, and tapioca for dessert.

Last night we had some baked Tilapia and mashed potatoes, I had a dash of some hot sauces my daughter had bought me for my birthday. Left over apple pie and ice cream for dessert. Chardonnay to accompany all of that.

Tonight was another lentil, bacon bit, mushroom and potato stew thing, also amped up with one of the other hot sauces.
Very filling which was good as I failed to eat breakfast or lunch and just had copious mugs of mate coccido ( Argentine green tea in a bag )
A toblerone bar and Malbec for dessert.

Last night we were going to visit Mr. Max, an izakaya in the middle of DFW for my birthday. We’d last gone there many years ago, and it never seemed to be a problem to get a seat. We got there about an hour and a half after opening time (6:30 PM), and there was a crowd of people waiting at the door. I poked my head in the door and saw the place was packed and hopping. Every seat was full, and there were people standing around socializing on top of that. A couple of groups of people showed up, decided the wait was going to be too long and moved on while I did this. We were already past hungry, so we also changed our plans and grabbed some Hattie B’s chicken and had a very enjoyable dinner. She had a small dark combo in the mild fashion with greens and beans, and I had tenders spiced to the hot level with fries.

But my urge for Mr. Max wasn’t cured by that, so we tried again today. We got there about 15 minutes before opening and got in the already pretty respectable line. When they opened, we were able to get a seat at the bar (which was kind of fortunate, I didn’t really want to take my shoes off and sit at a table). It was everything I remember. We had agedashi tofu and a mixed vegetable and shrimp tempura plate to share between us. She had tonkatsu ramen for her main dish and I had Tawan mazesoba. A few Asahi drafts to drink, along with water.

I joked that they needlessly included a spoon with my dish, even though it had no soup. The joke ended up being on me, because I used the spoon to grab every tiny bit of the ground pork, scallion and sauce goodness at the bottom of my bowl that I couldn’t manage with chopsticks. We’re going to have to frequent that place more often than we have been, and apparently we should do it before we’re actually really hungry. I’m really happy they have the problem of being popular, they’ve been there forever and been consistently wonderful. I kind of want to go there on a Friday at 6:30 and see if we can get in before closing time, but I think that kind of adventure might make me unpopular with the missus.

Yesterday was chicken breasts in lemon sauce, a new recipe. Did not like. Marked ‘do not cook again’ in the notes in my recipe box.

Today will be salmon in honey mustard sauce, an old recipe which I do like. Spinach souffle, biscuits and satsumas shall round out the meal.

Buffalo wings, celery and baby carrots with extra blue cheese dip, and garlic parmesan tots, washed down with a Truth IPA. Later, some leftover homemade Thanksgiving apple pie with vanilla ice cream and a sprinkling of cinnamon sugar, and a glass of ice water.

A potato hash with sausage, bacon, onions, and a bit of garlic. There will no doubt be angle food cake for dessert, as I have a bunch sitting around and it ain’t gonna eat itself.

Right now I’m crunching on some garlic pita chips, just because they’re directly in front of me and also are delicious.
I have some guac in the fridge, we’ll see how hungry I am.
