What's for supper?

I’m tackling a vegetarian mossaka from a new cookbook tonight. I’m not vegetarian, just trying to be healthy during the working week.

I’m having my doubts about it though, fearing it might be a little bland and over-tomato-ey. There’s a tahini and yoghurt sauce to add, but I might throw in some cheeky feta to give it a bit of help.

Oh, and a nice bottle of Southern Italian red. It may be mid week health kick time, but let’s not go mad.

Pork chops, some kind of veggies, and whomp biscuits tonight. (The kind that come in a tube and you whomp 'em on the counter). And wine. Then we’ll talk about ice cream for a while, but we don’t have any, so my husband will make himself a peanut butter and jelly sandwich.

Having returned from the Binghamton area with a bottle of Lupo’s marinade, it’s chicken spiedies for the fam!

They are tasty. It’s more-or-less just meat marinaded in an Italian dressing type concoction and grilled and served on an Italian roll/hot dog bun. Chef John has a good recipe and video for them. Apparently, lamb is the original version of the spiedie, but it’s predominantly chicken and pork these days. I went to the Lupo’s in Endicott (that’s the place that originated them from what I understand) and they didn’t have lamb for sale. Looks like that whole region of New York, from the Southern tier to Western New York has variations of the chicken marinaded in Italian dressing thing going on. (Chiavetta’s in Buffalo; Cornell chicken in Ithica [OK, maybe not specifically Italian here, but salad dressing nonetheless]; Spiedies in Binghamton.)

We had roasted vegetables (onions, peppers, tomatoes, olives, courgette, with balsamic vinegar and garlic) which I topped with a haddock fillet. Served with garlic bread.

Vinho verde is very young wine, usually bottled before it’s really ready. I never had much luck with it. The big reds like the Douros were more to our liking.

Leftover pork ribs and (sorta) homemade cole slaw.

Ribs were actually better today than the previous days (this is day 3 of 3).

The nice thing about vinho verde is the low alcohol content. You can knock back a whole bottle at lunch with your Significant Other and still plan on motoring through the Portuguese countryside all afternoon.

I love panko-ing chicken cutlets and pan-frying them – not frequently, because I hate the mess of the flour-egg-panko triple dredge – but I usually treat 'em like Schnitzel rather than Italian Milanese. They get served with some kind of spuds and pan gravy, or with a warm potato salad.

Also also, thanks for the potato soup link. That is a VERY basic recipe, damn close to a French Bourgeois “soupe a la bonne femme.”

Tonight, my night off, I made Black Pepper/Garlic Cube steak with baby lima beans and Mac&Cheese.

Baked a potato on the grill, then grilled a small steak while I sauteed up a ratatouille. Simple and quick tonight.

Tri-tip and creamed spinach.

I am so over this Atkins thing. I could barely choke it down.

Buffalo wings, bleu cheese dressing, celery. Novel enough that I didn’t gag on it. FTW. Still in ketosis and down 3.2 pounds in the first week. Hating every minute.

Creamed tuna on toast.

Frozen egg rolls (OK, formerly frozen egg rolls) and a big pile of stir fried peppers, mushrooms, pea pods, and baby carrots. Yummy.

A vegetarian harira (Moroccan legume soup) the Ukulele Lady got off the NY TIMES website last week. I actually made it yesterday, let it sit overnight to let the flavors meld then warmed it up and added whole wheat pasta this evening.

It SUCKED. Very little savor to it. Very disappointing as it was a dreary cold rainy day here in NYC and I would have enjoyed a good soup.

I’m having a late snack of a sandwich of leftover roast chicken on rye bread right now.

Clearly. Nobody who wasn’t going through serious carb withdrawal wouldn’t complain about a steakhouse dinner. Makes me kind of happy that I don’t have the self control to give up my pretzels and chocolate.

Heh. The SOS thread inspired you, too? I had some bastardized creamed bacon & sausage thing over toast for breakfast due to that thread.
