What's For Dinner Tonight: Episode 2021 – A New Hope

Tonight was pulled pork sandwiches. Smoked pistachios as a side.

Seriously? Smoked pistachios? A friend has gotten into smoking big time. Meat, fish, and now pistachios. He gave me some, but pistachios are delicious, and smoking them doesn’t make them taste any better. IMHO.

Cheap vodka and rocks.

Smoky beef chili and roasted carrots.

Pork chops with mustard/gooseberry jam sauce, spaetzle and a salad. A mini ice cream cone for dessert.

A bowl of stuffed cabbage soup with a glass of Redbreast 12 while I watch it rain.

Tossed salad, veggie quiche, two scones and two cups of decaf, well-sweetened.

A corn dog with jalapeno mustard, El Chingon to wash it down.

Chicken enchiladas, a couple really good kiwi fruit and some Castelgufo chianti.

Well, spaghetti and meatballs.
I went to the church pantry today, found this box called Pocky.
Its thin biscuit sticks with strawberry coating. They look like sparklers…it said good by 3/3/21 but they are good.

Beef tips in a garlic/onion/ginger gravy served over short grain rice. Hideously cheap vodka on ice for me, home carbonated water for the health nut

Add 99 to your birth year, that’s your effective “best by” date.

I’ve eaten salad dressing that was expired when Teddy Rosevelt could have eaten it, and it was yummy.

Pocky rocks, I loves it. As long as it’s still crispy, I’d say it’s still good. The strawberry is one of my favorites.

Went out for Indian chicken curry. Am now having an IPA.

I made fried rice with Char Siu and tiny shrimp, celery, peas and carrots, and scallions. So good! Dessert was Pain Au Chocolat made with mini candy bars inside. Some were Almond Joy, some were Snickers, some were plain Hershey’s.

Pan fried tilapia with a lemon caper reduction. Steamed broccoli with cheese sauce.

Dale’s Pale Ale to drink.

Jerk chicken and an IPA.

Meatball sandwiches, green beans with almonds, fruit salad with red grapes and kiwi fruit.

Finally made my spaghettini with marinara sauce and sauteed garlic mushrooms last night.

So tonight will be the kind of easy dinner I love – pop the casserole dish with the leftovers into the microwave with a couple of dabs of garlic butter on top, spoon the spaghettini into a pasta dish with the mushrooms and melted garlic butter on top, sprinkle generously with fresh-grated parmesan, and pour a glass of wine!

Used up some old frozen salmon from the freezer and made salmon cakes: salmon, breadcrumbs, celery, onion, pepper, egg, mayo, Old Bay and hot sauce.

Side of couscous and broccoli.

Teriyaki marinated turkey kebabs in an onion, pepper, and pineapple stir fry served over short grain rice.

Crab cakes and cole slaw is on deck for tonight. Might have the last of the au gratin potatoes too. Probably some clementines too since I just got a big bag of those.
