What's For Dinner Tonight: Episode 2021 – A New Hope

I made salmon cakes and boiled shrimp, with sliced tomatoes that were surprisingly good!

Ricotta and spinach lasagna. OK, it’s packaged frozen lasagna, but as someone else recently said about boxed lasagna, don’t judge. Besides, this is Mama Yolanda’s, and Mama knows how to make a ricotta and spinach lasagna! I don’t normally like spinach but I love ricotta and mozzarella and this combo is magnificent. It’s going to take 90 minutes in the oven so it should go in in about an hour.

I love how we tend to associate posts with our avatars. I never thought of a yellow canary as a fan of salmon and shrimp! But then, we’re about to have a Bernese Mountain Dog enjoying lasagna!

Easy dinner tonight. Had a quart of Carrot Lentil Soup frozen, heated that up. Served with smoked salmon roll ups. Anyone else make these? I take 2 inch squares of smoked salmon, spread on some softened cream cheese, add capers, then roll up like a cigar. Mmmmmm.

Southern Tier 2X IPA to drink.

I love salmon rollups - I don’t make them often, but when I do I use the salmon, cream cheese, fresh dill and tortillas. Roll up and cut slices - I’ve seen them called pinwheels in recipes.

Special occasion tonight - we went out to a local steakhouse. I had strip steak au poivre with haricot verts and my husband had a cheeseburger with fries. Deviled eggs as a starter, Angel Ink pinot noir to drink.

It was just OK. Hadn’t been to this place since before the pandemic and the smaller menu and higher prices were noticeable. Very nice service, though.

Oh, how very cool! Glad you enjoyed it! Do enjoy that paprika. Give it a good sniff – that’s what a decent Hungarian paprika should smell like – sweet and like red peppers, very little bitter or sour notes. I have another imported paprika that also claims to be from Kalocsa from Otto’s Imports that just has this really odd, sour note it and lacks that lovely sweetness.

A nice pörkölt (what usually gets translated as “Hungarian goulash”) or Hungarian goulash soup would both make excellent follow-up, particularly the soup (gulyásleves or just gulyás) Most of my paprika gets used up with the soup, with the paprikash a close second (though I tend not to make the paprikash as much when the weather warms up. The soup I make year round, especially when we go camping.)

My dinner today was just a simple chicken noodle soup in the pressure cooker. Didn’t feel like getting too fancy, and the cold weather had me hankering for some comfort soup. One 3-4 lb chicken, some carrots, celery, and onion, along with some Polish dried egg noodles. The kids will eat it, so that’s always a win!

It’s very smooth and full. Exceptionally nice!

Two cups of coffee, French onion soup, lamb pasta bolognese, ice water, a Vermouth cocktail and later, some very tart lemon drops.

I broke down and tried my first Chick-fil-A sandwich after reading the thread on here about it. I liked it. Now I feel like I have to buy the ethical equivalent of some carbon offsets or something.

Running low on supplies and it’s cold and snowy out, so time to get creative! Pulled a jerk pork chop out of the freezer and will do in the broiler. Will make Bush’s Homestyle beans with bacon and BBQ sauce and sauteed white onion, serve it with jerk pork chop and fries and a few glasses of Cabernet. I would consider outdoor grilling even in February, but it’s been an unusually snowy week and the barbecue is under a foot of snow. Weather service says warmth is coming in the next few days, though!

I just started some Trader Joes falafel mix and made some tzatziki sauce, which is currently chilling in the fridge. Also a tahini based lemony sauce. Got some nice greens to make some falafel wraps. Planning on air fryer-ing them. Haven’t decided on pita vs naan.

Another pizza from South Polk Pizzeria, this time pepperoni and mushroom. Just as good as the first time. Dadgum IPAs as a beverage.

Neapolitan style pizza from a great local pizzeria, ice cream cake and a really nice Montepulciano. Una buona sera! (A good evening!)
