I oven dried some tomatoes last night, it being the height of tomatoes coming from the garden season, and they came out great! Gonna make some pesto and build a pizza with them, some fresh mozz, and feta. I’m pondering throwing an anchovy on there too. Haven’t made a firm decision yet.
Two slices of cold pepperoni pizza, some hot spaghetti sauce in which to dip the crusts, some Spicy Sweet Chili Doritos and a glass of ice water.
Yesterday was take out Mongolian BBq, very meh.
Today grilled cow and melbec as per usual.
Butcher shop burgers with slices of Monteray Jack and a sweet kale salad with craisins,pepitas, and poppy seed dressing. J.Lohr Wildflower red and G&Ts for bevies/dessert.
Well, to join with those with relative disappointments, my son was supposed to come over today for a few days but cancelled due to not feeling well. I was looking forward to the crispy potato-flake pickerel actually made with pickerel this time instead of haddock, but that will have to wait. Fortunately the pickerel was still frozen so I popped it back in the freezer. Instead of pickerel, dinner last night was a burrito with Desert Pepper corn and black bean salsa, and a Stouffer’s Salisbury steak and mashed frozen entree + peas, carrots, and baby corn mix.
Well, the son felt better yesterday so I finally made the crispy potato-flake pickerel. He wanted a late dinner which worked out fine because the pickerel needed more time to fully thaw.
This time, besides using real pickerel instead of haddock, I also used mild curry powder instead of the hot stuff I had used before, and was cautious not to use too much. The end result was just perfect, with just a hint of curry spiciness, nice and golden and wonderfully crispy. We had it with fries, fish and chips style, with tartar sauce and a sprinkling of Crosse and Blackwell English fish & chips malt vinegar.
I discovered that the pickerel fillet still had the skin on one side, and decided to remove it. It’s quite easy to do with a small sharp utility knife. I think it was the right thing to do in order for the fish to be uniformly coated in the lovely ingredients, and I’m not a big fan of eating the skin anyway.
The only bad news (for me) is that I gave most of it to my son for dinner as there really didn’t seem to be that much, although the entire fillet weighed almost exactly one pound. I only left one piece and one tiny fragment for myself. Next time I think a pound and a half split two ways would be about right.
Anyway, tl;dr version: This is a great recipe and definitely a keeper. I’ll use pickerel again if I can conveniently find it at a reasonable price (the small one-pound fillet at the fish department of a hoity-toity upscale store was almost $30!) but haddock works quite well, too. And I love the subtle taste and frying performance of the avocado oil.
Mrs mollusc roasted some cherry tomatoes with garlic, threw in some pine nuts, pepper flakes and fresh basil and served over spaghetti.

Last night was stupid, dinner wise. I’m feeling pretty mentally wiped out right now, so I knew there couldn’t be much effort involved.
Thought I’d just order from my favorite Thai place - closed on Tuesdays. Hey, Taco Tuesday! A new little taco place just opened near me, but I just had super delicious tacos Friday. Pizza, my usual go to, sounded too greasy and heavy.
Okay, I’ll toss some bao in the steamer. Two bao left. Thought there was another package in the freezer. Nope. On the plus side, freezer is now cleaned and organized.
Ended up having a boring chopped salad with shredded chicken, sunflower seeds, and bacon bits.
I’m still in an unpleasant headspace, so maybe I’ll Thai tonight.
@wolfpup I’m so glad it went well. It’s a keeper for me as well. I have the added bonus of a ton of fishing friends and a commercial fishery in town so it’s not quite so expensive for me. I want to try it with Northern Pike next or possibly catfish. I think they’d both be able to handle it.
SWMBO sent me a link on what to do with all the tomatoes coming in now so I’ll be doing a pasta dish tonight with roasted garlic and cherry tomato with shaved Parmesan and shredded Coppa de Parma.

BBQ tonight, with mashed potatoes and watermelon. Probably a chocolate mousse bar for dessert too.
A stir-fry dinner of chopped cabbage, onions, carrots, and lean ground beef, with various seasonings and sauces. Pretty good, I guess.
Salmon on the grill, zucchini fries in the air fryer.
Toum yogurt garlic sauce with pita bread for dipping, some chicken fatteh, a glass of mango iced tea and later, a glass of Starbucks iced mocha.
Today the weather cooled down a bit, so before it heats up again tomorrow, I cooked dinner in the oven. “Fall-Apart Caramelized Cabbage” was very good. I had some leftover tzadziki to serve with it. White wine spritzers to drink.
On a business trip to Lafeyette for all this week. A very average burger from Chillis tonight as I was in late. Looking forward to Blue Dog cafe with their awesome boudin balls, various locations red beans and rice , gumbo and some local hoppy ales all this week.
Next week salad with salad, and water.

Several of my favorite local restaurants here have closed due to COVID. It sucks.
Last night: chicken Caesar salad, caprese on toothpicks (with basil from our backyard garden), raisins, ice water. Later, a Hershey bar and a glass of cold milk.
Picked up supper tonight; Wok Box Hong Kong 18 spice noodles for me, Ginger beef rice box for SWMBO and green onion cakes with satay for appy. Ice water for drinks.
