What's For Dinner Tonight: Episode 2021 – A New Hope

Oven baked cod, mash potatoes, peas and sweetcorn, probably a few glasses of Chardonnay.

Marinated chicken tacos with extra cilantro & lime. Pinot grigio-sparking water spritzer.

Processed a large batch of our tomatoes last night and turned them into passata sauce. I used that tonight along with some pancetta, oregano from the garden, basil, thyme, garlic and shallots to make spaghetti with a ridiculous amount of shredded 30 month old Parmigiano Reggiano. Ice water and cream crackers topped with homemade rasperry jam and mascarpone cheese.

I caramelized some onions and mushrooms and threw that onto a perfectly cooked steak. That and yummy green peas made two meals for me.

And I lost weight! I’m going repeat that in the next week for sure.

Double cheeseburger with lettuce, fried onions and ketchup; french ries and ketchup; Caesar salad; glass of ginger ale with ice. Later, a strawberry ice cream bar with a crushed-nuts coating.

Delicious. I sipped some, neat. At some point I refilled my glass. Woke up this morning fine. :beers:

Off to BiLs house for family cow consumption fest, Malbec to be consumed, and dog to be played with.

Sounds just about perfect!

Tonight was Philly Cheesesteaks made on the grille with my cast iron plancha. Not the purest form but thinly sliced ribeye dusted with steak rub and granulated garlic, sliced sweet onion and red bell pepper. Topped it off with sliced provolone and toasted the hoagie buns . Ice water as the bevvie and Fig Newtons for dessert.

Last night friends stopped and I made burgers on the grill.

But the showstopper was my tomato salad. I diced/chopped some perfect tomatoes and dressed them with salt, pepper, drizzled mayonnaise (homemade), and drizzled Melinda’s Thai Sweet Chili Sauce.

Tonight will be Wolfgang Puck’s shrimp recipe (though I use sherry instead of chardonnay). It will be served over linguine with a green salad and garlic bread on the side.

Got a jacket potato in the oven, gonna fry up a pork chop and build some gravy. Maybe make a tomato salad, it’s nearing the end of fresh tomatoes from my back yard.

Went out for Indian food. From the menu - “Shahi Korma: Creamy curry thickened with grounded garlic, ginger, tomatoes, cashews, raisins and also cooked with Indian spices [with lamb].” Also basmati rice, garlic naan and stuffed spinach naan. It was all excellent.

I saw a New Orleans dish that I had not been familiar with called Chicken Sauce Piquant being made on a recipe show, so I decided to try it last night. Turned out excellent! I think it’s going on the regular meal rotation.

Here’s a recipe very close to what I did (I used white meat chicken because it’s what I had on hand, but next time I’ll make a point of buying thigh meat):
