What's For Dinner Tonight: Episode 2021 – A New Hope

Another day or hammers, crowbars , saws and floors so we cooked up some previously frozen empanadas.
Collapsed on the sofa with wine and watching the 49/rams.
Everything is hurting.

My gf made a huge pot of vegetable soup. Delicious.

Last night I made Margarita chicken wings which turned out awesome! Marinated in tequila, lime and orange zest and juice, and agave. Then baked, then onto the grill to crisp them up. Along with cole slaw with Marie’s cole slaw dressing.

Tonight will be a less stress dinner. Those wings took a bit of time!

Over the weekend we saw a roots-reggae band (Truth and Rites) at VooDoo Brewery in New Kensington. They had food pairings offered. We had Jackfruit Tacos that were incredible. I’m going to have to find some Jackfuit and try working with it.

Campbell’s tomato soup with croutons, a grilled cheese sandwich on whole wheat, some Fritos and a glass of ice water. Later, some chocolate-covered peanuts and a glass of cold milk.

Chili-Glazed Salmon with Bok Choy. Excellent.

Dinner was this afternoon at around 4:00 because I was hungry, and consisted of a Burger King whopper and fries because, why not? BK has either improved in recent years or the place I used to go to long ago was badly managed. Their burgers are huge and have a smoky flame-broiled flavour, and their fries are quite good Better than Wendy’s, and no comparison with McDonald’s crap. The only better burgers are the ones I make at home, and, arguably, Harvey’s. But Harvey’s ruined their fries recipe by “improving” it in some bizarre way.

Chile Colorado served with refried beans and rice. Cerveza to drink.

Garlicky shrimp with rice cooked in broth, chopped onion, and spices.

Leftover macaroni with poached chicken and spaghetti sauce, with a generous dusting of grated parmesan and a side of garlic toast, washed down with a glass of ice water and a small glass of Merlot. Much later, some butterscotch hard candies.

Meatloaf tonight, with a baked potato and an apple.

We’re having chili tonight. I was trying to wait for the cold front heading our way, but we needed a “pot of something” for dinner, and chili is the winner.

Poke bowls.

Today I happily found myself in possession of the ingredients for that Waffle House favorite: fried egg and bacon sandwich on raisin toast. Yum! With a side of waffle fries done in my air fryer.

We had leftover vegetable soup. I also made crazy salads, which is salad made with as many ingredients as possible. At one point my gf mentioned that she thought she’d eaten a caper, but hadn’t found another, so what was it? I put one caper berry in each salad.

Tuna casserole tonight. (Made with homemade cream sauce, not Campbell’s Cream of Mushroom!)

Is that even legal?

Couldn’t think of anything for dinner, so I thawed three big pieces of cod, made a batter with Newcastle Brown Ale, thickly sliced three smallish potatoes, and made six pieces of fish’n’chips.

Only used about ⅔ or ¾ bottle of the ale, so that went down me gullet. I thought I’d get a Guinness out of the cupboard, but it was a Henry Weinhardt’s. So I drank that at room temperature. (Also Woodinville bourbon.)

We went to Disneyland Wegman’s today and got some provisions. That meant lobster cakes and a potato au gratin cake for me, Singapore noodles with chicken and shrimp for my husband, and a strawberry/blueberry fruit mix for us both. My friend sent me a 3-pack of Gia Coppola wines, so we had the white one to accompany. I also had a small piece of cookies and cream cake for dessert.
