We had the korean Pork thing again last night, very tasty.
We are off to a friends 50th birthday tonight so should probably something before we go, we have quite a bit of frozen Chicken tortilla soup left over, so it will probably be that, and later , tequila I would think.
Kroger had a sale on lobster tails today, so tonight is going to be lobster risotto.
We took the family out for my granddaughter’s 17th birthday last night to a restaurant called the Federal American Grill. It was very good! We shared an appetizer of cheeseburger egg rolls. (Different!) I had a crab cake and a spinach salad. The others had braised short ribs over mushroom bacon risotto, chicken fried steak, or fettucine Alfredo. Lots of laughter and stories. And a big brownie with ice cream and a sparkler for the birthday girl’s dessert, which was shared among all of us.
It was wonderful.
Tonight, we’re going to go completely lazy and have canned beans and cornbread from the grocery bakery. Fortunately, the grocery store is HEB, so the jalapeno pintos will be awesome and I expect the cornbread to be almost as good.
You’ve got to be really lazy not to make your own cornbread!
SWMBO requested chicken-fried steak, mashed potatoes, and gravy for dinner. So I made chicken-fried steak, mashed potatoes, and gravy for dinner.
Hehehe, nope. Not even willing to grease up a pan and mix in the milk and eggs. Our excuse is that HEB was out of our preferred pre-made mix. Our shame is that the cornbread from their bakery was damn sweet. It was even sweeter than Jiffy. We paid mildly for our laziness, but it won’t be forgotten soon.
We were at a brewery Saturday and the food truck canceled!! The bartender suggested a pizza place literally right across the street with an “eclectic menu”.
I ordered a Grandma Pie which was a pizza with red sauce, steak, green pepper, onion, buffalo fries, cheddar and provolone cheese. I also ordered six stuffed grape leaves. Everything was delicious.

Those will be served with an assortment of crackers, serrano ham, smoked salmon pinwheels, olives, almonds, apples and dried cherries. Spanish Torrontes to drink.
French onion soup with croutons and melted cheese, and a glass of ice water. Later, a cupcake in a bowl with vanilla ice cream, some raspberry jam and chocolate syrup.
Leftover split pea soup with a side of sauerkraut. Beverage was Yuengling Hershey’s Chocolate Porter that a friend gifted me.
Dessert was crazy, an invention my gf came up with. She called it pudding. It used chocolate soy milk, chia seeds, orange zest, shredded coconut, egg whites, and a few other ingredients. It was . . . different.
Dinner tonight is half a rack of ribs courtesy of the BBQ joint where I work (we had an order get messed up, the ribs sat around for a while & couldn’t be sold … I decided not to waste them) plus some instant mashed potatoes, which I at least dressed up with butter and minced green onion because I’m not always a lazy peasant.
Iced tea to accompany, plus nibbles of Gouda cheese because it’s right in front of me.
Dessert will be some of my mother’s Christmas cookies - those things have an infinite shelf life and are based on pecan shortbread, IIRC.
Update: decided dinner needed a lil’ sumpin’ more, and settled on microwave corn/poblano soup. Haven’t had this brand before, but it’s pretty good. (Campbell’s “Well Yes” line.)
Also a croissant that was, frankly, leftover from last night’s dinner.
Plus since I cracked open a can, I had to crack open some gooshy food for the cats, so they’re having a Friskies treat tonight.
Finally, a multivitamin.

Leftover fish (no chips) for me. I found three or four bottles of rice vinegar; and red wine vinegar, apple cider vinegar, balsamic vinegar, and white vinegar. Took me a while to find the malt vinegar. I also finished off the creamed spinach with feta.

We had dinner from one of our favorite food trucks, Billu’s (Indian food). He had Chicken Vindaloo as a special, with a very spicy warning. My gf loves his Vindaloo, so she ordered that. I was feeling like something more mild, so I ordered Chicken tikka masala.
I took our food into the brewery and we prepared to eat. I was a little surprised how spicy mine was, while she was a bit disappointed how mild her’s was.
Not until we were both nearly finished did the 15 watt appliance bulb light up over my head. Our meals were switched around.
I had an English cucumber/Roma tomato/feta/kalamata olive salad and kofta for dinner. Mrs. L.A. had leftover fried ravioli w/alfredo, leftover lasagna, and focaccia.
It was unusually warm today so we went over to a brewery that has a very nice, large biergarten. They had an Irish band and an Irish food truck, so fish and chips for dinner tonight with a nice dark lager.
Sous vide rare ground steak burgers, seared with a torch. Served with sautéed mushrooms piled high, Swiss cheese, and assorted condiments.

Looooong night closing shift at work. We were short-handed, slammed with both the usual Saturday dinner rush plus the pre-game party planners ordering endless racks of ribs, ungodly pounds of pulled pork, etc. for tomorrow’s season finale of sports.
So imma fix some mac’n’cheese (an instant cup - don’t judge! - so’s not to produce more dishes to wash) plus add some … { checks pantry for can of tuna } umm … smoked trout? Apparently?
Yesterday was excellent take-out from a Thai restaurant. Tonight was a dish with braised cabbage, air-fried potatoes, feta cheese, and an egg on top. With some chocolates for dessert.
