What's For Dinner Tonight: Episode 2021 – A New Hope

Last night was the old stand-by, beef and noodles. Tonight was leftover beef and noodles. Tasty as always.

Tomorrow is going to be smoked ribs, some rolls and apple cider slaw. I’ll be smoking some chicken at the same time, and we’ll probably eat on that for the rest of the week.

A gluten free bacon sandwich, aka a baked potato stuffed with an ungodly amount of costco bacon bits, cheese and sour cream, some chopped up olives on the side and some colemeans english mustard, because it was there in the fridge.

Spinach feta quiche tonight. I usually use a store-bought pie shell for it, but today I made a whole wheat olive oil pastry that was easy to put together and tasted good, so that recipe is a winner. Also finished up the leftover chips from the fish and chips dinner last night.

An angus burger, smashed and well seared, both sides … Toasted onion bun with a smattering of mayo, thin sliced red onions and some dill pickle relish… the burger was finished with 10 year old cheddar.

Pure fucking bliss.

I’m not really that interested in the Super Bowl, but I do use it as an excuse to have some food or beverage from the home cities of the two teams competing in the game. So that means I have a pot of Cincinnati style chili simmering on the stove right now. I’ve never actually made that kind of chili before; actually I don’t think I’ve ever had Cincinnati chili before. I will be serving it four way, over spaghetti with cheese and onions.

So, @Mangetout got us thinking about soup. We ended up making Faux Smoked Salmon Chowder. It could also be called Chicken Chowder. See my gf makes a killer smoked salmon chowder, but we followed that recipe replacing the salmon with chicken.

We did a special menu here tonight. Ina Garten’s Coquille St. Jacques, which did not disappoint; Greek salad, a heart-shaped French baguette (corny yet excellent) and champagne. Dessert was a couple of slices of cake left over from my birthday (frozen and thawed, just as good as the day I bought it) and an ice cream sandwich from our local custard dealer, split in two because they are so large; LBV port to accompany.

Homemade mac and cheese with two cut-up hot dogs in it, and a glass of ice water. Later, some hot chocolate pudding with a scoop of vanilla ice cream.

I’ve been craving the lasagna from a place on the other side of town, but they’ve not had any the last few times I’ve called. So, I’m making my own attempt at it. Hot italian sausage, ground beef, ricotta, sauce, mozz. I don’t think I’ll mess around with a bechamel.

Chicken fajitas is on the menu tonight.

We’ve been eating smoked chicken and ribs since Sunday. Tonight I had the last two ribs and a drumstick, with a Tupps IPA and an Art Car IPA to wash them down.

I think we only have enough left for lunch tomorrow, after that I’ll have to find something new to eat.

First Dinner: two hot dogs.

Second Dinner: chicken wings (flats) with sweet chili sauce & fries.

Dammit, for once in my life, I’m still hungry. Might have to scrounge up Third Dinner.

Met a friend for a couple of drinks and a catch up at Permission Whiskey in Houston Heights. Had a couple of GnTs , he had a couple of old fashioned and a ’ smoked old fashioned’ to see what the fuss was. Smelt like someone had dropped a match in it. Shared a charcuterie board. 140 bucks for all that without ti.
Very average gnts , all show no substance place, won’t be back.
Cooked a quessadilla with some of the chicken I grilled last night when I got back home.

Two chicken tacos from work. So far, that’s all I got. Will have to scrounge up more - but that’s a start.

Thawing out some homemade pierogis.

I finally got around to making my New Years sauerkraut Thursday when it rained all day. I have been eating it since and probably will be the next 3 days.

Mrs Mollusc has tolerated me for 21 years today so as our marriage can now drink, it is a whole lotta sushi accompanied by some champagne , picking it up to take it home now.
Also got promoted to my bosses role as he was moved up and elsewhere , not sure how I feel about that, I ducked out of that nonsense 10 years ago and have been in more technical manaement role , so back to corporate shenanigans, but we will eat sushi and drink for that as well.

Salmon Ceviche over rice and arugula.

I think we’ll have pepper steak and rice. I might change my mind though. I have some shredded chicken in the freezer, and I might make something with that.
