What's For Dinner Tonight: Episode 2021 – A New Hope

I’m going to make honey lemon chicken tenders, alongside some tortellini Alfredo, and something green. And crusty bread?

Love those vegan pumpkin gnocchi, Biggirl! Very clever.

Last night for me: baked salmon, couscous with teriyaki sauce and a glass of ice water. Later, a marzipan ball and two praline pecan candies.

Just pot roast for dinner, but ohhh, the dessert!

All week we’ve been having a takeoff on my gf’s grandma’s apricot bar recipe. You make a bottom and top crust from oatmeal, brown sugar, etc. Between those layers you put apricot, made by simmering dried apricots and some orange juice for a long time.

In this version we made lekvar bars, subbing prunes for the dried apricots . Sooo good.

Shepherd’s pie last night. Tonight was lox on toasted sourdough baguettes slices with honey mustard sauce and dill.

We used to make them with date filling, too. Yum!

Stuffed eggplant. Stuffed grape leaves as a side. Various IPAs from Ska Brewing. I was stuffed!

Last night I made vegetable beef soup. So easy! And delicious. Stew meat, trimmed and bite size, into the pot. Added a can of diced fire-roasted tomatoes, chopped onion, chopped potatoes, chopped celery, a bag of frozen mixed vegetables, beef stock, water, salt, pepper, and garlic powder. Bring to a boil, then simmer for a couple of hours. So satisfying on a cool fall night.

Crab bisque, a cornbread muffin and a glass of ice water. Later, some Lemonhead candies.

Lat night was McRibs. Mmmmmmm, processed pork, onions and BBQ sauce.

Beef barley soup and crusty bread. Or maybe stew.

Saturday night was leftover pizza from Mama’s Pizza, my favorite pizza place.

Tonight was Cook’s Kitchen’s recipe for pad gra prow, with Thai chilies from our garden. We put in a few extra chilies for excitement’s sake. Delicious, I am sweating off the last bit of dinner now. mmmmmmmmmmmmmm

Surf and turf (sort of). Salmon and Italian Hot Sausage on the grill. Various beers to drink.

The supermarket down the street makes sandwiches, as most do, but these are exceptionally good. I love sandwiches so for the rest of the day and lunch tomorrow will be feasting on some combination of assorted sub, turkey sub, and tuna salad sammy, with potato salad or fries. Way better than Subway. Very simple & informal but very yummy for this sandwich aficionado. :yum: Might have the last of it with baked French onion soup tomorrow.

Spicy hummus with pita bread, shawarma with mixed grilled veggies and yogurt sauce, and fries and ketchup, all with a glass or two of ice water.

A squash and tofu yellow curry. It was delicious. Served with braised cabbage. A glass of iced vodka to drink.

Kentucky Bourbon Salmon, a sweet potatoe, and sliced cucumber in red vinegar with pepper. Yum! :slight_smile:

Caesar salad, veggie and pepperoni pizza, and a glass of ice water.

Rummaging around for something for dinner, I pulled a couple of beef sirloin kabobs out of the freezer, in a red wine and shallot marinade with garlic and spices. Going to throw it on the grill in about an hour, and either make vegetable mushroom rice or just have it with potato salad, with a side of Divine Intervention*.

* - Divine Intervention is a very nice blended red from a boutique winery called Coffin Ridge. Another one I like from them is Back from the Dead. Very appropriate wines for Halloween!

I’m doing a Trader Joe’s special. Marinara, linguini, meatballs, and baguette. I’d have some TJ’s wine, but that’s illegal in NY.
