What's For Dinner Tonight: Episode 2021 – A New Hope

We still had the ingredients for more subs, so we had more subs.

I made fantastic Shrimp Fried Rice - with Char Siu (bbq pork) added that I made a few weeks ago and had in the freezer for just this occasion. And frozen egg rolls that weren’t that great, actually. One of these days I’ll go to the trouble to make them from scratch.

I don’t like making egg rolls from scratch, but I love making spring rolls. The spring roll wrappers take some practice to learn but once you have the technique down, it is fun.

Deep-dish pepperoni, sausage and pineapple pizza, a tossed salad with blue cheese dressing, and a glass of ice water. Later, two small lemon tarts and a glass of milk.

Yesterday was Kenyan coconut chicken with rice. I needed to dial back the jalapenos on that one a notch. Today was crab cakes, green beans, biscuits and clementines.

Tortellini in marina sauce with parmesan cheese, a tossed salad with Newman’s Own raspberry vinaigrette dressing, two biscuits with garlic butter, a glass of ice water and a glass of merlot. Later, some Christmas cookies and a glass of milk.

For the first time ever, I decided to try out the Hawaiian BBQ place. Chicken Katsu was not very good, but the teriyaki chicken was very good. I liked the salad, but I think they left the dressing off. I think a different location might enhance my next attempt.

But the real kitchen action was the soups we worked on all day, which will be served xmas eve to my family.

My gf made Parsnip and Red Lentil Soup with Asian Spices, adapted from a recipe in The Inion Square Cafe Cookbook, it’s vegetarian friendly.

I made a huge cauldron of oxtail soup, complete with brandy flambé of the oxtails and a red wine and roux sauce. More work on it today.

Summer in December! Cheeseburgers, watermelon, air-fried potatoes.

Last night, spaghetti and meatballs. Tonight-teriyaki chicken.

I was very lazy today, so chicken tenders from Church’s.

Baked lemon chicken, couscous and a small tossed salad, with a glass of ice water. Later, Christmas chocolate roll with a glass of milk.

Last night’s Christmas dinner was almost perfect. I had out-clevered myself by buying a prime rib roast many days before and freezing it, and had a hell of a time getting it thawed. But fortunately I started the process several days early, and by Christmas Day it was fine.

So dinner was a prime rib roast, roasted just medium-rare according to my meat thermometer (my meat thermometer lies, but I’ve long since figured out how to compensate for it), with varying degrees of doneness for everyone’s satisfaction. Plus Yorkshire pudding, mixed veggies, mashed potatoes, and hunter gravy. Mashed potatoes made with russet potatoes boiled in water salted with kosher salt, and whipped with cream and garlic butter. Some extra-hot horseradish for those so inclined. And several bottles of J. Lohr Cabernet to go around.
